PorchBox Thanksgiving Leftover: Potato Gnocchi w/ Gravy Cream Sauce

Ingredients (1 - 3 servings)

6 oz/1 cup of mashed potatoes

1 egg

1 tsp. of salt

3/4 - 1 cup All Purpose Flour

Leftovers: ham, turkey, green beans, carrots, etc

2 oz gravy

splash cream or 2 Tbs butter

Optional: cranberry sauce, herbs (chives, green onion, sage, etc)

Instructions

Boil a pot of water. Meanwhile . . .

To make dough: combine mashed potatoes, egg, and salt to a bowl. Stir to combine and pour in flour 1/4 cup at a time. Mix together, and add more as necessary to combine into a uniform dough mixture.

To shape, knead for one minute and roll into a tube/snake. Use a fork to cut gnocchi into desired size, and roll on the back of a fork to get the gnocchi texture.

Once water is boiling, boil for 8-10 minutes until gnocchi float (that means they are done). Stir occasionally to keep gnocchi from sticking to each other or to pot. Drain from water.

To make sauce: Sautee leftovers together for 2-3 minutes until warm. Pour in gravy & cream/butter and cook for another minute until combined. Toss in gnocchi and cook until combined.

To serve: pour into bowls and garnish with cranberry sauce & herbs. Enjoy.
