Pot Pie Bowl
One of my favorite guilty pleasures were these chicken bowls that my high school cafeteria used to serve with mashed potatoes, chicken, corn, cheese, and gravy. Since the Pot Pie already has most of those elements, it seems natural to use leftovers in that way. Just microwave the pie (it’s better baked, but who has the time?), add the mash (or make more mashed potatoes!), more cheddar cheese, and any frozen veggies that are on hand. Because of the comfort and warmth of Pot Pies, I also associate them with Thanksgiving ,even though it’s not, so if you want to whip up some stuffing or gravy in the middle of the Spring and add it to your Pot Pie bowl, I’d respect that.
Mashed Potatoes
Whether you microwave or heat these on the stove top, be sure to not overstir them because it will turn your tender mashed potatoes into potato glue. If you are reheating on the stove top, bring cream or milk to a boil, then mix in your potatoes. If you have enough, you can use them to make a shepherds pie, mashed potato cakes, gnocchi, croquettes, or even for pierogi fillings! Post and tag us in your creations. We would love to see them.
